On slopes at altitudes of 250-280 meters, new vineyards have been planted with Sauvignon Blanc vines, ensuring excellent grape quality with unique aromas. Grapes are carefully harvested early in the cool morning based on taste tests and aroma development monitoring. Part of the grapes undergoes skin contact to enhance flavor without losing acidity. A novel pressing method results in a more elegant and refined wine. Fermentation occurs at temperatures between 12-14°C, followed by aging on lees for 3-6 months with regular stirring. This wine has received high ratings and medals from international competitions, including double gold at Veritas for the 2012 vintage and silver at IWSC for the 2013 vintage. Generous winter rainfall in 2021 allowed the soil to store sufficient moisture. A late and prolonged winter delayed the start of the growing cycle. Throughout the season, Stellenbosch experienced cooler conditions than usual due to frequent spring and early summer rains, requiring careful vineyard management to prevent fungal diseases. Cooler summers led to slow and even ripening, concentrating aromas in the grapes while maintaining natural acidity. This year produced an exceptionally memorable Sauvignon Blanc vintage. Simonsig Estate, situated in northwestern Stellenbosch, is owned by the Malan family, known for cultivating noble grape varieties and producing some of South Africa's finest wines, including reds, whites, and méthode champenoise sparkling wines. The vineyards cover over 300 hectares at the foot of Simonsberg Mountain and are one of the largest private wine producers in the country. Each Simonsig wine embodies the family’s tradition of high-quality viticulture.
