In the United States during World War II, when European liquors were hard to obtain, tequila became widely available. Technically, tequila is a type of mescal; the key difference lies in the fact that only blue agave grown in certain regions of Mexico, primarily around the city of Tequila, can be used for tequila production and it must be distilled at least twice, unlike mescal which is typically distilled once. It was officially recognized as a spirit in 1873, allowing its distinctiveness to be clearly identified from mezcal.
